Asian Wrapper Easy Samosa

This ingredients will make samosa filling for 6 spring roll wrappers.
Ingredients
300 g boiled potatoes, roughly mashed
1 tbsp oil
½ tsp cumin seeds
50 g onion, finely chopped
1 small green chili, finely chopped
½ tsp ground coriander
¼ tsp turmeric
½ tsp garam masala
½ tsp salt
20 g chopped parsley or spinach or any greens (optional)
Pinch of dried mango powder (amchur) (optional)
6 vegan spring roll wrappers (each 15cmx15cm)
About 40g Rapeseed oil for frying
1tsp cornstarch plus 3 tsp water mixture (for sealing )
Method
Heat 1 tbsp oil in a pan over medium heat.
Add the cumin seeds and toast for about 30 seconds until fragrant.
Add the onion and cook for 3–4 minutes until softened and lightly golden.
Stir in the green chili, ground coriander, and turmeric. Cook for 30 seconds.
Add greens and cook for 1 minute until any excess moisture evaporates.
Add the mashed potatoes, salt, garam masala, and amchur (if using). Mix thoroughly and cook for 2–3 minutes.
Taste and adjust seasoning if needed.
Transfer to a plate and let the filling cool completely.


Wrap the cooled filling and fry them with enough oil.
How to wrap the filling


Brush some starchy water to seal it well. 

Server it with chutney of your choice:)
