Manakish with Za'atar

Note:This dough can be used to make either manakish or small pizzas, depending on the topping.
Ingredients (for 4 small Manakish)
For the Dough – Preparation
125 g lukewarm water
7.5 g fresh yeast (=½ cube)
1 tsp sugar
Add Later
230-40 g wheat flour in total (Type 405)
½ tsp salt
10 g olive oil
Some extra flour for shaping dough balls
Topping (of your choice)
Za’atar + olive oil in a 1:1 ratio
If you want to mix your own Za'atar see below.
Method:
Activate yeast: Dissolve the 7.5 g fresh yeast and 1 tsp sugar in 125 g lukewarm water. Set aside for 15 minutes until foamy.
Make dough: In a bowl, mix about 230 g flour, yeast water ½ tsp salt and 10g of olive oil.(I usuallt start with 200g flour and mix, gradually add about 4 tbsp more flour later)
Knead:Knead the dough for about 15 minutes, until it becomes smooth and elastic. Make sure the surface of the dough stays slightly moist.
First Rise:Cover the dough and let it rise for about 1 hour, or until it has doubled in size.

Shape & top:
Sprinkle some flour. Divide the dough into 4 portions, roll each piece into a flat circle, and add your desired topping



Bake: Preheat the oven to 250 °C and bake for 8-10 minutes, until golden.


My Za’atar Spice Blend (with Europian ingredients)
Ingredients for a 150g small jar
2 tbsp dried thyme
2 tbsp toasted sesame seeds
2 tbsp sumac
1 tbsp dried oregano
1 tbsp dried marjoram
1 tbsp brewer's yeast
1 tsp salt
Instructions
Lightly toast the sesame seeds in a dry pan until golden (if not already toasted). Let cool.
If you prefer a finer blend, lightly crush the thyme and oregano with a mortar and pestle.
Mix all ingredients together.
Example for this recipe
3 tbsp za’atar
3 tbsp extra-virgin olive oil

3tbsp each Za'atar and olive oil.This amount is exactly enough for 4 small manakish.
