No-Knead Bread Dough for 6 sticks

No-Knead Breadsticks

Makes 6 breadsticks

These soft, lightly chewy breadsticks require no kneading. The dough is mixed with a stick or spatula, fermented, then gently shaped by hand. Shredded vegetables, seeds, and herbs can be added for extra flavour and texture.

Ingredients

  • 300 g flour

  • 250 g water

  • 7 g salt

  • 15 g sugar

  • 20 g fresh yeast (Oma's Ur-Hefe)

  • 10 g olive oil

For shaping

  • About 1 tbsp flour per portion, for dusting and handling

For baking

  • About 1 tsp olive oil per breadstick

Optional additions

  • 1 cup shredded carrot

  • 1 tbsp seeds of your choice, such as sesame or flax seeds

  • 1 tsp dried herbs or spices, such as oregano or Italian herb mix

Method

1. Mix and ferment the dough

Put the flour, water, salt, sugar, fresh yeast, and olive oil into a large bowl.

Mix thoroughly with a stick, spatula, or wooden spoon until you have a sticky, uneven dough. No kneading is necessary.

Cover and leave to ferment for 1 hour in a warm place, or until the dough has become noticeably puffier.

2. Add the vegetables and seeds

Add the shredded carrot, seeds, and herbs or spices, if using.

Gently fold them into the dough until evenly distributed.

3. Divide the dough

Lightly flour your work surface and your hands.

Gently turn the dough out onto the floured surface. Avoid pressing the air out of it.

Divide the dough into 2 portions.

4. Divide the dough again

Sprinkle each portion with a little flour and divide each one into 3 pieces, giving you 6 pieces in total.

Let the six pieces rest for 5 minutes.

Meanwhile, preheat the oven to 190°C.

5. Shape the breadsticks

While the oven is heating, lightly dust your hands and the dough with flour.

Gently roll and stretch each piece into a long, snake-like shape. Then twist each breadstick gently to create a simple spiral.

Place the breadsticks on a baking tray lined with baking paper, leaving some space between them.

Let them rest for another 20 minutes.

6. Add olive oil

Just before baking, lightly brush each breadstick with about 1 tsp olive oil.

7. Bake

Bake at 190°C for 12–15 minutes, or until the breadsticks are lightly golden and cooked through.

Let them cool for a few minutes before serving.

Make It Your Own

You can make these breadsticks with many different ingredients.

Try rosemary, olives, sun-dried tomatoes, or even cinnamon and raisins.

Feel free to experiment with your favourite herbs, vegetables, seeds, or other additions. Enjoy creating your own version!
