Vegan Beef Bowl (Japanese Fast food)

Inspired by Japanese fast food "Gyu-don", I set out to recreate this comforting bowl using simple vegan ingredients.

Ingredients Serves 2
Vegan "Tofu Beef"
200g extra-firm tofu, shredded with a vegetable peeler
30g (2 tbsp) oil
Sauce
240g (1 cup) water
1/4 cup Texture Vegetable Protein (Alnatura's fine soy schnitzel)
18g (1 tbsp) vegan oyster sauce
12g (1 tbsp) sugar
15g (1 tbsp) light soy sauce
15g (1 tbsp) red wine
5g (1 tsp) grated ginger
80g (½ cup) onion, thinly sliced
50g (½ cup) green onion, sliced
5g (1 tsp) dark soy sauce
3g (1 tsp) cornstarch
A pinch of pepper
To Serve
2 bowls steamed rice
Japanese ginger pickles (this one is actually turnip& beet pickles)
Garlic/teriyaki sauce (Optional)
7 spices chili (Shichimi)
Instructions
In a small bowl, whisk together the water, vegan oyster sauce, sugar, light soy sauce, red wine, dark soy sauce, cornstarch, and grated ginger until smooth.
Using a vegetable peeler, shred the extra-firm tofu into thin ribbons.
Heat the oil in a large frying pan over medium-high heat. Add the shredded tofu and sauté until golden brown and lightly crisp around the edges.
Add the sliced onion and green onion. Continue sautéing until softened and fragrant. Add 1/4cup of TVP (dry).
Pour in the prepared sauce mixture. Increase the heat to high and cook for about 2-3 minutes, stirring frequently, until the sauce thickens and coats the tofu.

Divide the steamed rice between two bowls. Spoon the tofu (beef) mixture over the rice.
Finish with Japanese pickles, a drizzle of garlic teriyaki sauce optionally, and a sprinkle of 7 spices chili before serving.
