28.02.2026 WS Memories and Recipes

I really appreciate that you all made it despite the strike 🚂

We managed to prepare a lot of colorful, healthy side dishes .

Thank you for your contributions, your great spirit, and the beautiful vegetables.

I would love to share some recipes from the event so you can recreate them at home.


Method

Mix the flour, salt, and water until a shaggy dough forms, then knead for about 5 minutes until fairly smooth. Cover and let it rest for 20–30 minutes to hydrate the flour and relax the gluten.

Knead again briefly for 1–2 minutes until smooth, then divide into 4–6 pieces.

Lightly coat the dough with about 1 tbsp neutral oil, cover airtight, and let it rest at room temperature for 2–3 hours.

Shape each piece of dough into a smooth long coin shape. Using a chopstick or your finger, press a line lengthwise down the center to mark it.

Hold the dough at both ends and gently stretch it to about 30 cm, lightly slapping it against a clean work surface to help lengthen it evenly.

Once stretched, tear the noodle open along the marked center line to create a long loop (an O shape).

Continue stretching and gently slapping the dough until it becomes thin and even.

Repeat with the remaining pieces and cook immediately.

Boil for 2 minutes or so.

Serve with chili oil,vinegar, and soy sauce or any sauce of your choice.

(50%balsamic vinegar/50% light soy sauce)💜

For this flavorful chili oil, combine 1 tbsp chopped garlic, 1 tbsp chopped ginger, 1 tbsp chili flakes, 2 tsp fermented black beans, 2 tsp Sichuan peppercorns, a 5 cm cinnamon stick, 2 star anise, 2 bay leaves, 1 tsp raw cane sugar, 1 tsp salt, and 100 ml heated rapeseed oil with lemon flavor.

You can also use the same sauce (Chili oil. Vinegar/Soy Sauce) for boiled broccoli or bok choy to make a quick and flavorful topping.


At this event, we made something similar, though it was improvised and not exactly the same recipe.




Improvised other toppings ,

We had cloud ear mushrooms, pickled napa cabbage and radish, tomato tofu scrambles, and plenty of smoked tofu on the side, along with a beautiful beet stir-fry with a hint of cloves.
