Instant Pot Black Bean Oshiruko (Sweet Soup)

I created this dessert recipe using Turkish black beans, which are affordable and widely available throughout Berlin. They make a delicious and accessible alternative to traditional Japanese Azuki beans for making Oshiruko (Japanese sweet bean soup)
Ingredients
Ingredient | Amount |
Dried Turkish black beans | 100 g |
Water (for soaking over night ) | As needed |
Water (for cooking)and a pinch of salt | 450 g (450 ml) and 1g salt |
Sugar | 50 g |
After soaking, 100 g of dried beans will weigh approximately 300 g.
Instructions
Soak the dried beans in water until they have absorbed enough water to reach approximately 300 g.
Drain the beans and add 450 ml of fresh water.
Cook in a High pressure cooker for 40 minutes.(I use Instant Pot)
Allow the pressure to release completely before opening the lid.
Add 50 g of sugar and stir until dissolved.
Notes
The sugar-to-dried-bean ratio is 50%, giving the soup a pleasantly mild sweetness.
If you have Azuki beans, feel free to use them instead of black beans.
