Kısır (Fine Bulgur Salad)

Ingredients

  • 1 cup fine bulgur (DURU köftelik fine bulgur)

  • 1tbsp EV olive oil (first mix)

  • 2 cups hot water

  • 1.5 cup parsley (finely chopped)

  • 1cup cucumber (small diced)

  • 0.5cup spring onions (chopped)

  • 1 lemon (juice of ¾, remaining ¼ for garnish)

  • ½ tsp salt

  • ½ tsp black pepper

  • 1tbsp Turkish pepper & tomato paste (medium spicy)

  • 1tbsp tomato paste

  • 1tsp dried mint

  • 1tbsp EV olive oil (for finishing)

  • Extra herbs and lemon slices for garnish

Instructions

  1. In a bowl, mix 1 cup fine bulgur with 1tbsp olive oil.


  2. Pour in 2 cups hot water, cover, and let it sit for 5 minutes until softened.

  3. Fluff the bulgur and mix in:

    • 1/2 tsp salt

    • Add:

    • 1tbsp Turkish pepper & tomato paste (medium spicy)

    • 1tbsp tomato paste

    • Lemon juice

    • 1/2 tsp black pepper

  4. Mix well until evenly combined.

  5. Gently fold in: parsley, cucumber, spring onions and mint

  6. Drizzle 1tbsp EV olive oil on top and mix lightly.

  7. Serve with fresh leafy greens, fresh herbs and lemon slices.
