Simple Baba Ganoush

At this event we didn't add garlic.

Baba Ganoush

Ingredients

  • 2 medium eggplants =about 500g(pierced to prevent bursting, whole or sliced into half. Grill at 250°C for ~30 minutes)

  • 2 tbsp lemon juice

  • 3 tbsp tahini

  • ½ tsp salt

  • Olive oil (for drizzling)

  • 2 grilled garlic (optional)

  • Fresh herbs (for topping, e.g., parsley or coriander,pepper,paprika)

Instructions


  1. Scoop the flesh from the grilled eggplants into a bowl.

  2. Add lemon juice, tahini, and salt. Mash or blend until smooth and creamy.

  3. Transfer to a serving dish, drizzle with olive oil, and sprinkle with fresh herbs.

  4. Serve with warm pita, veggies, or as a side to your favorite Middle Eastern dishes.






STEP3

Scoop all the creamy part. Remove the dark skin.

And blend the creamy part with hand mixer or chop it well with a knife .

Make some mushy paste.


STEP4

Transfer eggplant paste to a bowl and mix it with sesame paste, lemon juice and salt. (you could add garlic too)

Sprinkle some fresh herbs and optionally pepper.

Drizzle some EV olive oil.
