It was such a joyful and inspiring day at our Vegan Improv Curry Cooking Event!

A huge thank you to everyone who joined and brought matching ingredients to the theme "Curry" and love for plant-based cooking to the table.

For those who attended and for those who couldn't make it ,I will be sharing the recipes and cooking inspirations from today's creations.

We successfully made many delicious dishes, including:


We made about 600g of tomato chutney and served half with a drizzle of coconut milk and transformed the other half (=300g) into a lentil curry below.

Quick Brown lentil curry

300g Tomato chutney ,400ml can of brown lentils (rinsed),1tsp cumin powder,1tsp turmeric,1tsp garam masala, 100g coconut milk, topping parsley

Simple cauliflower rice

Cauliflower Rice :Finely chop 1 head of cauliflower in a food processor, then steam with a pinch of salt until tender and fluffy. And Thank you Tom, for showing us your method of making tasty red curry :)

Pimientos de Padrón

Padrón peppers are small, green chili peppers originating from the municipality of Padrón in the Galicia region of northwestern Spain. Famous for their unpredictability, they are popularly described as the "Russian roulette" of Spanish cuisine.

Thank you, for showing us how to fry these special peppers! They're best enjoyed fresh and hot, so it's ideal to cook them at the very end of the meal preparation. The neutral oil becomes infused with their delicious flavor!you can use it later to enhance other dishes.

I'm always impressed by everyone's creativity and passion within this community.
