Thank you all for bringing such great ideas again!

We successfully cooked up a wonderful afternoon with Italian inspirations.

I’m sharing some of the recipes you requested here.

Spiced Onions  Infuse about 2 tbsp olive oil with ½ tsp cumin seeds and ¼ tsp fennel seeds. Add about 400 g sliced red onions and 2 minced garlic cloves, and sauté until translucent. Add about ½ tsp salt and cook until the onions are tender. Add about ¼ tsp chili and ½ cup soy yogurt, then sauté until the oil separates from the yogurt. Finish with a sprinkle of black pepper.

Garlic Mushroom.Sauté 400 g brown mushrooms in a dry pan until golden first, then add 20ml olive oil, ½ cup chopped red onion, and 3 chopped garlic cloves; sauté until fragrant, then add ⅓ tsp salt and 1 tsp lemon juice, and finish with a handful of parsley and black pepper.

Ingredients for about 850g Apfelmus

  • 11 small apples, peeled, cored, and seedless

  • 250 ml water(adjust)

  • 1 tsp cinnamon, optional

Method

  1. Peel the apples, remove the cores and seeds, and cut them into chunks.

  2. Place the apples in a large pot with 250 ml water.

  3. Cover and cook over medium-low heat for about 20 minutes, stirring occasionally, until the apples are completely soft.

  4. Add cinnamon, if using.

  5. Blend until smooth with a hand blender.


We also made soups, marinated tofu, and grilled pumpkin spontaneously along the way.

And that was a wrap on our Italian-inspired cooking afternoon!
